Lately, I’ve been grilling up veggies then stashing them our refrigerator in order to add some spice to our meals with. For example — making veggie quesadillas, adding them to a salad, using them in a chicken cacciatore crock pot recipe, and sometime just eating them for a snack. It’s a lot of fun.
