As I was thinking about how fast the weekend flew by I said to myself, “What the heck, I’m gonna make some pancakes and surprise Roniboy with a fun breakfast.” I’m thankful that I don’t have to make gluten, soy, and dairy free pancakes by scratch because I use a mix from Authentic Foods. I LOVE it! It’s gluten, dairy, soy, nut, and wheat free. You can’t beat that! The price can vary, but I get this from Granny’s Gluten Free Zone for $6.99. Pancakes Recipe: 2 eggs (or 4 egg whites) 1 cup of milk or milk substitute 2 tablespoons vegetable oil (such as canola or corn) 2 tablespoons maple sugar or brown sugar 1 cup of Authentic Foods Pancakes & Baking Mix The recipe is pretty straight-forward just measure, dump and mix all the ingredients together. And....  voila you have pancakes! The best part is that they taste really good especially with some fun jam or syrup. Finally, I also love this mix because you can also make golden muffins and crepes!
