I am the lady who stands around the deli aisle reading the fine print on each package. I am also a lady who loves bacon. So when I found SCD legal bacon at our local Sunflower Market, I did a little dance. Then I bought 6 packages. No kidding.
Only the honey cured varietal is SCD legal, so look carefully. It is pricey (Around $6.00 for 10 ounces), but is high quality, free of chemical nitrates, and an indispensable companion to Saturday morning eggs.
p.s. SCD does allow occasional consumption of well cooked bacon, even if sugar is listed as an ingredient. I’m not completely sure why this gets a special dispensation, but I am assuming it is because since bacon is only cured with the sugar that the residual sugar after curing and cooking it well is negligible.
